Apple and Cinnamon Muffins

This recipe, from "Muffins - Fast and Fantastic" by Susan Reimer, was passed on to me by my lovely friend Halloumi. I hadn't tried it until now because I only had the list of ingredients, oven temperature and baking time ... no method! So when looking through my recipes for something lovely to make today as a treat I thought, well you don't really need a method, do you ... all muffins are made in the same way. And for those of you not sure about this, it's sift all dry ingredients together, mix all wet ingredients together, then wet into dry just mixed.

As commented on an earlier post, I've given up on using paper muffin liners as I find myself having to scrape way too much muffin off the paper. So I've gone back to basics and now just wipe the muffin forms with melted butter, sift over some flour, and then knock the excess flour off. Seems to work much better for me and I love the look of these mini-cakes piled on a plate.

Ummm lovely and moist with the apple and I just love the hint of cinnamon. I might well make these again but using wholemeal flour and brown sugar instead to make a healthier version. Definitely worth making again.


Apple and Cinnamon Muffins - Makes 10 - 12 muffins, standard size

255 g plain flour
3 tsp baking powder
1/2 tsp salt
pinch of cinnamon
110 g fine white granulated sugar
1 egg
150 ml milk
170 g finely chopped apple, skin too
90 g butter, melted
sugar and cinnamon to sprinkle over


Prepare muffin tins. Preheat oven to 190-200°C.

In a large bowl sift together flour, baking powder, salt, cinnamon and sugar. In a separate bowl beat egg with a fork. Add milk, chopped apple, and melted butter. Stir well. Pour liquid ingredients into dry mixture. Stir until just combined. Batter will be lumpy but no dry flour should be visible Fill muffin cups three-quarters full. Top with a little sugar mixed with cinnamon. Bake for 20-25 minutes. Muffins are done when tops are lightly browned and spring back when presssed gently.

Those look like just my thing!! I completely agree with you about muffins and muffin papers. I think when they are to be piled on tea towels, to take along for a picnic as an example, there is no need for paper...

I love the idea of using whole wheat flour and brown sugar, I´m sure it will be wonderful with the cinnamon and apples.
Also your lasagna looks light and yummy, I might save this recipe for a later stage of my life :)

I make these often Pi, in fact i think my original recipe might have been from Halloumi. I use wholemeal flour though and becuase of my sweet tooth add a punch of raisins and some sort of chopped nuts. I need to get that book.

There's a company that makes muffin liners out of greaseproof paper. When you peel them off the muffins nothing sticks at all. Seems like a miracle.
