I had two small ripe avocados that were needing to be used up and so I decided to make a guacamole. We've still got a couple of hours of daylight, and some jobs to do, so this was just a little something to keep us going. I usually serve it as part of a small mezze. The avocados were quite small so I made about half of the following recipe. You can make guacamole in the food processor if you want but I much prefer to make it by hand so as to retain some texture, I don't want it like a paste. This recipe is lovely and fresh tasting, really zingy!
Guacamole1 ripe and flavoursome tomato, peeled and deseeded
a big handful of fresh coriander leaves
1 clove of garlic
1 green chilli, deseeded
juice of 1 lime
good pinch of salt
2 large, ripe avocados
On a big cutting board pile together the tomato, coriander leaves, garlic and green chilli, and chop everything finely using a large, sharp knife. Now, using the side of the knife, scoop everything into a bowl, pour over the lime juice and season with salt. Mix well. Add the avocado flesh and using a fork mash it into the tomato mixture. It should be a little lumpy. Check seasoning and serve.
