As I mentioned in the post previous to this one, life at the moment isn't leaving me much time, or energy, for trying out new recipes or blogging. Our evening meal has had to be something easy to put together and above all quick. Friday evening Mr. P requested a spaghetti bolognaise for over the weekend and so I duly took out a packet of minced beef from the freezer with the idea of making the sauce yesterday. Well, life got in the way again and there was no time for me to make a slowly simmered ragù unfortunately, so we ended up pulling some things from the refrigerator to make a salad platter instead. So today, not fancying a bolognaise anymore, I decided to make some frikadelln (meatballs) and a roasted vegetable salad to serve on the side.I made the frikadelln as I was taught many years ago when I lived in Germany. Just some minced beef mixed up together with finely chopped onion and parsley, well-seasoned with salt and black pepper, some slices of bread, crusts removed, previously soaked in milk and squeezed dry, and an egg to bind. I then popped the meat into the refrigerator for a couple of hours to let the flavours meld.
I made ten largish fridadelln, looking rather like small burgers, from the mixture and cooked them in a big non-stick pan slicked with a little olive oil over a medium heat for about 5 minutes a side, until cooked through and nicely browned. These were served with some German mustard on the table! Ummm, so simple but delicious .... Mr. P was happy.
Hopefully I shall soon have more time for cooking. I have quite a few recipes I want to try and some old ones too that it would be nice to blog about.

Hi Pi,
they bought back memories for me living in Denmark where we called them frikadiller. I used to use half pork and half beef though and served them on rye bread with red cabbage.
